Broccoli Pesto Sauce

This sauce is for you if you like broccoli as much as I do! It is one of my favorite vegetables. I remember my mom telling me they are like little “trees” when I was little I made my pesto in the food processor. Unlike normal pesto this contains NO basil – the basil was replaced by the broccoli – hence the name Broccoli Pesto Sauce! What you need:  1/2 pound of broccoli 1 Tbs butter 1/2 small onion, minced 2 cloves garlic, minced or put through a garlic press 1/2 tsp salt 1/8 tsp pepper 5 Tbs heavy cream (heavy whipping cream liquid) 1/2 cup Parmesan cheese (I used pre-shredded) What you do: Chop broccoli into bite-sized pieces. 500 Calorie Enchiladas

 I found this recipe in Cooking Light magazine. I was skeptical about how they would taste, being 500 calories (serving: 2 enchiladas) but, the ingredients seemed pretty straight forward, so I tried it. They were delicious!! My husband even liked them, and his didn’t contain and cheese. I liked this recipe because I had everything on hand in my pantry or refrigerator. What you need: 1 pound boneless, skinless, chicken breast 1 TBS chili powder 1-15oz can black beans (low sodium) rinsed and drained 1 cup frozen corn 1 cup salsa 8-8inch whole-wheat tortillas 1/2 cup shredded cheddar cheese (reduced fat) What you do: Preheat oven to 375 degrees. Cut chicken into small pieces. Place in a large pan, sprinkle with chili powder and cover with 1/2 cup of water. Bring to a boil, reduce heat to medium-low and simmer for 10 minutes. This sauce is yummy. It really does taste like broccoli, so if you are not fond of broccoli this recipe is not for you. The texture was nice and it came together easily. I found the original recipe on pinterest which was pinned from Smitten Kitchen by a lady I follow. What you need: 1/2 pound of broccoli 1/2 pound pasta (I chose spaghetti) 1 TBS unsalted butter 1 TBS olive oil 1/2 small onion, minced 2 cloves garlic, minced 1/2 teaspoon table salt 1/8 teaspoon ground black pepper 5 TBS heavy cream 1/2 cup Parmesan cheese What you do: Boil a large pot of water for your pasta. Meanwhile, chop broccoli into bite-sized pieces. Steam your broccoli for 5 to 6 minutes. You can do this over your pasta water, or use a steamer, or do so in the microwave. Whatever works. This slow cooker meal is comfort food at its best. It calls for dried herbs which you probably already have in your cupboard. Have you tried freeze-dried herbs yet? You can use those in this recipe also, they are delicious. You can use leftover ground beef in this recipe really easily as well. This lasagna slow cooker soup can be made on either low or high in your Crock Pot and both turn out great. This dinner is awesome because you can just use 1 pan!! Just 1 skillet on your stove, or as we did, an electric skillet. I got an electric skillet for my wedding and this meal is great for it. What you need: 2 Tablespoons olive oil 1-2 Large Chicken Breasts, cut into bite sized pieces 3/4 cup pineapple juice or apple juice (we used pineapple, but apple works great) 1/3 cup soy sauce 2 tablespoons brown sugar 2 tablespoons rice vinegar 1/4 teaspoon dry ginger 1 tablespoon minced garlic, or 1/2 teaspoon garlic powder cornstarch if needed served over rice What you do: 1.   Heat the oil in a 12-inch skillet. Enchilada Casserole This casserole is the best ever! It is delicious and super versatile  The recipe below feeds 4-6, but it can easily be cut in half or double. You can easily omit ingredients or add more in and it has always been delicious. You can eat it as a taco salad, or you can do what we do and pair it with Fritos scoops corn chips and eat it more like a dip. I have used tortilla chips as well, and that was yummy too.
