This makes about a 3/4 cup of dressing. We doubled the recipe and had plenty for four large salads and some leftovers. There are many of these recipes floating around out there. I really don’t like mayonnaise, wait, I hate it! so I needed a recipe that didn’t contain it. The results were a creamy, limey, cilantro goodness. A must try! This Cilantro Lime Salad Dressing will not disappoint. What you need: 1 cup of loosely packed, roughly chopped, cilantro (with stems removed) 1/2 cup plain Greek yogurt 3 Tbsp sour cream 3 Tbsp fresh lime juice (about 1 small lime) 1-2 cloves of garlic 1/4 cup of olive oil 1.5 tsp white vinegar 1/8 tsp salt What you do: Put all of the ingredients in a blender or food processor and pulse until smooth.

This Lemon Poppy Seed Vinaigrette dressing doesn’t need anything more than a jar to combine the ingredients in. You don’t need to chop, dice, cook, or use a food What you need: 2 Tbsp red wine vinegar 2 Tbsp extra virgin olive oil 1 Tbsp fresh lemon juice 1 teaspoon poppy seeds 1-2 teaspoons sugar salt and pepper to taste (I just did a few turns of the grinder) What you do: Add all ingredients into a mason jar and shake to combine.
I love hummus and I love a good homemade salad dressing! So, when I came across this recipe in All You magazine I just had to try it. I don’t “eat clean” all of the time, but this recipe was listed as a “clean” orange hummus salad dressing. It ends up being a little brown in color because of the balsamic vinegar, but don’t let the color alarm you because the taste it divine. This dressing is sweetened with maple syrup as it is a clean dressing, but I have used honey before and it was great. What you need: 3 Tbsp plain hummus 2 Tbsp balsamic vinegar 3 Tbsp orange juice 1 tsp mustard 1 tsp maple syrup 1/2 tsp fresh ginger (grated with a micro-plane) What you do: Whisk all of the ingredients together in a bowl and you’re ready to serve over the salad of your choice!
Avocado Chicken Salad Sandwiches – No Mayo! Mmmm… I love chicken salad sandwiches of all kinds. I have seen recipes like this one all over pinterest. My take on the recipe is below. What you need: 2 cooked chicken breast, shredded 2 large or 3 medium avocados 2 green onions, thinly sliced 1 Tbs lime juice 1/8 tsp garlic salt 1 Tbs Greek yogurt, plain salt and pepper to taste Bread, pita, flatbread, etc for serving Sliced tomato (optional for topping) What you do: Combine: The shredded chicken, green onion, lime juice, garlic salt, and Greek yogurt in a large bowl and stir to combine and coat chicken. Cube avocado in a separate bowl and mash a bit, still leaving some bigger chunks. Add avocado to the chicken mixture and combine all together. Add salt and pepper to taste.

Bajio CrockPot Chicken (I used mine to make a salad) I love love love Bajios. We used to have one in Logan and one of my favorite Newlywed memories was eating there (to go) with my husband. A salad and a drink was $5! Great deal! We then would go back home and watch The Mentalist. They sadly shut the Bajios down where we live….
