Avocado Chicken Salad Sandwiches – No Mayo! Mmmm… I love chicken salad sandwiches of all kinds. I have seen recipes like this one all over pinterest. My take on the recipe is below.  What you need: 2 cooked chicken breast, shredded 2 large or 3 medium avocados  2 green onions, thinly sliced 1 Tbs lime juice 1/8 tsp garlic salt 1 Tbs Greek yogurt, plain salt and pepper to taste Bread, pita, flatbread, etc for serving Sliced tomato (optional for topping) What you do: Combine: The shredded chicken, green onion, lime juice, garlic salt, and Greek yogurt in a large bowl and stir to combine and coat chicken.  Cube avocado in a separate bowl and mash a bit, still leaving some bigger chunks.  Add avocado to the chicken mixture and combine all together. Peach and Poppy seed Chicken Salad Sandwiches   I love love chicken salad sandwiches…..ones WITHOUT mayo that is. I came up with this recipe and it has never disappointed! I eat mine on a croissant with lettuce and mustard.   Honey bunny, however, eats his plain on a croissant.  What you need: 1 can peaches Poppy Seed Dressing (1/4 cup ish) I use LoftHouse brand 2 chicken breasts – cooked and shredded – (I boil mine and then shred) 2 stalks of celery – finely chopped 1 handful cashews What you do:  Take a medium mixing bowl and combine shredded chicken,  chopped celery, and handful of cashews, combine.  Dice the canned peaches into little pieces and stir those in. Chicken Salad Sandwiches (Using Tzatziki Recipe)

Tzatziki Chicken Salad Sandwiches I love love Chicken Salad Sandwiches. However, I hate mayo and miracle whip. This yogurt based, greek substitute is the best! A different spin on chicken salad. Leftovers keep for about 2-3 days. I eat on a croissant. 1 c cooked chicken breast, shredded or  chopped 1/2 cucumber 1/2 red onion 1/2  cup  Tzatziki Sauce (more or less, combine until texture desired is achieved) Juice of 1/2 lemon Couple dashes ground black pepper Bread or Croissant, this is a sandwich Lettuce (optional) Chop all veggies into 1/2″ pieces and place in a medium bowl. Add chicken, tzatziki, lemon juice, and pepper, and mix together until everything is uniformly coated. Spoon onto bread and top with lettuce. Enjoy!!

Grilled Cheese (In the Oven) I found this recipe on a blog that I follow. “plain chicken” this lady has very similar tastes to mine, so I love trying out and modifying her things to my exact liking. That is the BEST part about cooking…it is not so much a science as Baking. I don’t love baking.  Anyway. Enjoy!! We ate ours with Amy’s Organic Tomato Bisque Soup.  What you need: 8 slices white bread8 Slices of Chese  soft butter  ( I use I can’t believe its not butter)4 tsp grated Parmesan cheese Heat oven to 400ºF. Fill bread slices with cheese to make 4 sandwiches. Spread outsides of sandwiches with margarine; place on baking sheet.Bake 8 min.; sprinkle with half the Parmesan. Flip sandwiches; sprinkle with remaining Parmesan. Bake 6 to 8 min. or until golden brown.
