Quick and Easy No-Rise Time Pizza Dough  I love pizza. My husband is lactose-intolerant so I don’t really eat it as much as I would like to since he doesn’t eat cheese. Needless to say I don’t want to spend 8 hours making a pizza that I would be the only one eating. I searched for a recipe that was fast and easy. I love this blog called Mel’s Kitchen Cafe. Farmer’s Market Bruschetta

Farmer’s Market Bruschetta I live in a cute little town in Utah. They have a farmer’s market here every Saturday and my husband and I love to go. One of the things we make is Bruschetta. It does take a little bit of work to chop all of the tomatoes, but is totally worth it. This recipe is 1 baguette worth, about 15 slices.    What you need: 1 loaf of baguette style bread.  5 tomatoes, chopped (we take the seeds out of 3 of the 5 to cut back on liquid) 1 garlic clove finely minced  1/2 tsp basil (you could do more if you like basil) 1 and 1/2 TBS olive oil 1/2 TBS balsamic vinegar salt and pepper to taste extra olive oil to drizzle *** Note*** The olive oil and vinegar can be played around to your liking. Herb-Roasted Chicken and Tomatoes Oh my gosh! This dinner was soooo good. I am part of this online thing called and this was one of her recipes. I tweaked it a little to meet my personal needs and it came out delicious! So flavorful, juicy, and super easy to make.  What you need:  10oz grape or cherry tomatoes (I bought one of those plastic cartons) 1 shallot, finely sliced 3 TBS olive oil 1/4 tsp dried marjoram 1/2 tsp dried basil 1/2 tsp dried rosemary 1/8 teaspoon rubbed sage    salt and pepper to taste 3-4 boneless, skinless, chicken breasts 1 TBS Worcestershire sauce 2 TBS white wine vinegar  What you do: Preheat oven to 450 degrees.   Combine cut each of the cherry or grape tomatoes in half.  In a small bowl, combine the tomato halves, shallot, 1 TBS of the olive oil, and herbs and stir until combined. …

Italian Skillet Chicken

Tonight I am making Italian Skillet Chicken. Ingredients: 4 boneless skinless chicken breast halves 1 Medium onion, chopped 1 (14 ounce) can diced Italian tomatoes 2 Cups Chicken Broth 1 teaspoon dried basil garlic powder to taste 1/4 teaspoon black pepper 8 ounces uncooked spaghetti, broken into 2 inch pieces 1/4 cup Parmesan cheese How to make it: In a large skillet, cook chicken and onion until tender. (cut chicken into cubes) Add tomatoes, broth, basic, garlic and pepper to skillet. Bring to a boil, stir in spaghetti. Reduce heat; cover and simmer for 15 to 20 minutes.
