Enchilada Casserole This casserole is the best ever! It is delicious and super versatile  The recipe below feeds 4-6, but it can easily be cut in half or double. You can easily omit ingredients or add more in and it has always been delicious. You can eat it as a taco salad, or you can do what we do and pair it with Fritos scoops corn chips and eat it more like a dip. I have used tortilla chips as well, and that was yummy too. It really is just a dump it in and good it kind of thing. Alfredo Pasta Bake I just created this recipe based on what I had on hand. I thought it was O.K, but Kyle has been raving about it for days!  What you need:  – 1 Jar Alfredo Sauce  (I used Bartilla regular, not garlic or anything, but you can if you want) – 1 chicken breast, cooked and shredded (we just boil ours, and shred it) – Cooked Penne Pasta (I used about 1/2 the box, but however much you want) –  1 Can of pineapple tidbits, drained (the smaller half/size can, or just half of the larger can) – 1 1/2 cup mozzarella cheese  – 1/4-1/2 cup Parmesan cheese, shredded (I buy it pre-shredded) – 2 shakes of garlic salt (optional) What you will do:  1.  Preheat oven to 375 degrees 2. Italian Chicken Casserole This was YUMMY!! Kyle and I both loved it. And, since it served 5, we both ate it for lunch the next day.  Also, I apologize for the lack of pictures on my blog. Today I am making Chicken Rotini Ingredients: 1 (12 ounce) package rotini pasta 1 cup half-and-half cream 1/4 cup butter 1/3 cup freshly grated Parmesan cheese ( I use the shredded shaker kind from KRAFT) 1/4 teaspoon dried basil leaves 1/4 teaspoon dried oregano 1/4 teaspoon chopped fresh chives 1/4 teaspoon chopped fresh parsley 2 skinless, boneless chicken breast halves – cubed 1 green bell pepper, chopped (optional) 1 red bell pepper, chopped (optional) Directions: Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain. Combine half-and-half and butter in a saucepan over medium heat. Boil gently, stirring, until mixture has reduced to 1 1/2 to 1 2/3 cups. Remove pan from heat; whisk in cheese, basil, oregano, chives, and parsley. Cover, and set aside. Chicken and Biscuit Casserole What you Need: 1 pilsbury biscuit tube thing 1 can condensed cream of chicken soup (regular sized) 1/2 cup of Sour Cream 1/2 stick of butter, melted 1 can of peas, drained (LeShur is the bestest very sweet petite peas) 2 cups cooked chicken, shredded 1 cup mild cheddar cheese 3 TBS milk Dash of Pepper What you do: Heat oven to 375 degrees F. In a saucepan heat condensed soup and 1/2 cup sour cream. Heat until combined “smooth” (about 1 min) but it shouldn’t boil or get too hot. The point of this stop is just to combine them, it helps the biscuits not get doughy on the bottom. Then, in 8-inch square baking dish (some use 9×13)  stir in chicken, peas, milk, and melted butter, and the sour cream mixture you have created. Southwestern Chicken, Cheese, and Rice Casserole SO good! I will for SURE be making this again. It only took 5 minutes to put together and it was delicious! Total Time: 50 Minutes. 5 min to prep, 45 to cook Tonight I am trying this recipe. I looked on allrecipes.com and there were SOOO many chicken and rice casseroles.
