Enchilada Casserole This casserole is the best ever! It is delicious and super versatile  The recipe below feeds 4-6, but it can easily be cut in half or double. You can easily omit ingredients or add more in and it has always been delicious. You can eat it as a taco salad, or you can do what we do and pair it with Fritos scoops corn chips and eat it more like a dip. I have used tortilla chips as well, and that was yummy too. It really is just a dump it in and good it kind of thing. Holy delicious!!!!!  I was in the mood for some Chinese food for dinner and I live in a small town in Utah, and no where around here really delivers Chinese food, so I went with homemade. I also don’t love Chinese take-out as there is usually always a fatty piece of chicken in there and I really like my chicken well-trimmed. This orange chicken stir fry is to die for. It is our new go to recipe. As you can see from the picture, the chicken is not crispy or breaded like you may think about when you think about “orange chicken” from say Panda Express. No, this orange flavor comes from the stir fry sauce. Yummy! Much better than store bought processed sauces. 1 Pan Chicken and Veggies I love Pinterest. I get a lot of inspiration from browsing through there. One thing I found was a recipe similar to this one, but they used green beans and a lot of butter. I switched things up a little and came up with my own version. Enjoy! What you need: Broccoli – 1 or 2 bunches Red potatoes – 6 or 7  2 or 3 boneless, skinless chicken breast 1 packet dried Italian seasoning – (I used the Good Seasons brand) 1/2 a stick of melted butter.  What you do: Wash the broccoli and potatoes and trim the chicken. Preheat oven to 350 degrees.  Grease a 9×13 pan and lay the chicken in the middle of the pan.  Cut stems off of broccoli to create broccoli florets and cube potatoes.  Arrange broccoli and potatoes in pan around the chicken.  Sprinkle the packet of Italian Dressing Mix and…

The Best Pot Roast Ever! I could not have asked for a better response to this post. Gotta love pinterest. I have been getting emails about how the last post isn’t “linking” very well so you need to search my blog to find it. I am re-posting this recipe on my home page to try and solve this issue. I also updated a few things and have added a “what I do” section after the ingredients. ENJOY! What you need: A 2-5 lb roast. BBQ Chicken Salad (and some avocado dressing) My mommy and sister came up to Logan because Kyle and I were speaking in church. This is what we ate for dinner and man was it DELICIOUS!! I made most of it before hand and it was ready to go after church! You make the chicken in the CrockPot. I have included directions for the Salad, BBQ dressing, and GREEN avocado dressing What you need For the SALAD 3 chicken breasts (boneless, skinless) 2 cups BBQ sauce  (1 cup, 1 cup) 1/2 cup water lettuce (red, romaine, green leaf) frozen corn (cooked and chilled) 1 can black beans (rinsed and drained) 1 cucumber (seeded and cubed) 2 tomatoes (diced) tortilla strips (if desired) 1 green onion chopped For the chicken: place chicken breasts and 1 cup BBQ sauce with 1/2 cup water in the CrockPot. Cafe Zupas Taco Soup (CrockPot Style) I love CrockPot recipes for Sunday Dinner. Our Church is at 1:00 pm so, by the time we get home, we are ready to eat! This is by far one of the easiest recipes, it is a must try!! What you need:  – 2 can’s Black Beans, UNDRAINED   (1 can pinto, 1 can black if you like that) – 1/2 can of diced green chilis, (rinsed and drained) Use the whole can if you like the spice – 1 lb of ground beef, browned.
