As my husband and I go on this journey of his lactose-intolerance, I find myself looking for recipes that don’t use butter or milk. This bread is more of a dessert. It has a yummy glaze that goes on top! Butterfinger Cake

Butterfinger Cake I found this cake recipe on the “Plain Chicken” blog. Let me tell you, this cake is rich! You just need one piece it is so sweet. It was a real crowd pleaser!  What you need:  1 box yellow cake mix, plus ingredients to make the cake 1 can sweetened condensed milk 1 jar Smucker’s caramel ice cream topping 1 (8oz) tub Cool-Whip 4 regular sized Butterfinger candy bars, crushed Bake cake according to direction on the package. While cake is baking, mix milk and caramel topping until well blended. When the cake is done and while it’s still hot, poke holes in it with a fork. Pour milk mixture over the cake. Strawberry (Nesquik) White Chocolate Chip Cookies These cookies are DELICIOUS! I was looking for cookie recipes, and I came across one from the Picky Palate. And, they looked so cute and pink, and I love strawberry nesquick, so I wanted to try them. We made them tonight and they are goooood!  What you need:  2 sticks softened butter1/2 Cup strawberry milk Powder, Nestles3/4 Cup brown sugar2 eggs1-2 drops red food coloring1 Tablespoon pure vanilla extract2 1/2 Cups all purpose flour1 teaspoon baking soda1/2 teaspoon salt10 or 12 oz bag White Chocolate Chips What you do: 1.  Preheat oven to 350 degrees F.  In a stand or electric mixer beat the butter, strawberry milk and brown sugar until well combined.  Place eggs into a bowl and whisk in 1-2 drops of food coloring.  Pour into mixer along with vanilla and beat until combined, about 30 seconds.   Place four, baking soda and salt…

Oatmeal Coconut Chewy Cookies What you need: 1 cup granulated sugar1 cup brown sugar2 eggs1 cup (2 sticks) butter, softened to cool room temperature2 teaspoons vanilla1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon salt2 1/2 cups flour1 cup shredded, sweetened coconut1 cup quick oats What you do:Preheat the oven to 350 degrees.In a large bowl cream together the sugar, eggs, butter and vanilla until light and fluffy.Add the dry ingredients and mix until combined.Drop by tablespoonfuls onto a greased or lined (silpat or parchment) baking sheet. Bake at 350 degrees for 9-11 minutes, until the cookies are set but not overly browned (bake a few minutes longer for a crispier version). These were tasty! Rolo Cookies adapted from: 2 peas in their pod These were seriously sooooo good, sooo sooo delicious! What you need:2 1/2 cups all purpose flour1 teaspoon baking soda1/4 teaspoon salt3/4 cup cocoa1 cup butter, at room temperature1 cup granulated sugar1 cup light brown sugar2 eggs2 teaspoons vanilla extractBag of Rolo candies, unwrappedSugar (for rolling the cookie dough balls in) What you Do: 1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or silicone mat. Set aside. 2. In a medium blow, sift flour, baking soda, salt, and cocoa. Set aside. 3. With a mixer, cream butter and sugars together until smooth. Add in eggs, one at a time. Next, add in vanilla extract. Mix until blended. 4. Slowly add flour mixture to sugar mixture and blend well. I am making dessert 2 days in a row! The problem is Kyle and I can never eat a whole pan just us 2. So half of it usually goes old and crusty. But, I have Andes Mint’s left over so I am going to try it out.
