I found this recipe originally from the July 2012 Rachel Ray Magazine. It was easy to make and fast. A must try. I am sure you could use any pasta you wanted, but I liked the texture and shape of the called for ditalini pasta. The flavor was good, you definitely taste the tomato which makes sense since the name of the recipe is Tomato Pasta Soup. What you need: 1 cup minced celery 1 cup minced carrot 1 cup minced onion 2 tbs extra virgin olive oil 4 cups vegetable broth 15-oz can tomato puree (I used Huntz brand found at Wal-Mart) 2 cups ditalini pasta (the little ones, they look like a straw cut into little pieces) salt and pepper 1/2 cup shredded/graded Parmesan cheese (to top) What you do: In a large pot, cook veggies in the olive oil until tender. This slow cooker meal is comfort food at its best. It calls for dried herbs which you probably already have in your cupboard. Have you tried freeze-dried herbs yet? You can use those in this recipe also, they are delicious. You can use leftover ground beef in this recipe really easily as well. This lasagna slow cooker soup can be made on either low or high in your Crock Pot and both turn out great. Chicken Corn Chowder This soup is delicious. Such a smooth texture and full of flavor. I found this recipe in the Cooking Light magazine, July 2006 issue.  What you need: 1 TBS butter 6 green onions 2 TBS all-purpose flour 2 cups chopped and cooked chicken breast 1/4 teaspoon salt 1/4 teaspoon pepper 2 (10 oz) packages frozen – sweet corn kernels. (thawed and divided) 1 (14 oz) can chicken broth (I use fat-free) 2 cups milk (I used 1%) 1/2 cup shredded cheddar cheese (more if you are cheese lovers) What you do: Melt butter in a large chef skillet or dutch oven over medium-high heat.  Remove green tops from green onions and thinly slice the white portion of each onion. Homemade Chicken, Ranch, and Rice Soup I made this soup expecting it to be like chicken and rice soup – but it was soooo much better! So much flavor and it tasted even better reheated the next day for lunch.  This picture is not the best, but it works. Broccoli Cheese Soup I found this recipe on “Mel’s Kitchen Cafe”. She has some of the best recipes. This recipe feeds about 4 people. What you need:  1 3/4 cups chicken broth 1 small onion, diced 1/3 cup all-purpose flour 1/4 cup (4 tablespoons) butter 1/2 teaspoon pepper 1/2 teaspoon salt 2 cups milk (I used 1%) 1 1/2 cup shredded cheddar cheese, preferably sharp or extra sharp 1/2 cup shredded swiss cheese 2 1/2 to 3 cups chopped, lightly steamed or blanched broccoli What you do: 1. Simmer chicken broth and chopped onion for 15-20 minutes in a covered small saucepan, until onions are soft.2  Heat milk in microwave for 1-2 minutes.3.  In a separate medium-sized stockpot, melt butter then add flour, salt and pepper. Cafe Zupas Taco Soup (CrockPot Style) I love CrockPot recipes for Sunday Dinner. Our Church is at 1:00 pm so, by the time we get home, we are ready to eat! This is by far one of the easiest recipes, it is a must try!! What you need:  – 2 can’s Black Beans, UNDRAINED   (1 can pinto, 1 can black if you like that) – 1/2 can of diced green chilis, (rinsed and drained) Use the whole can if you like the spice – 1 lb of ground beef, browned.
