This sauce is yummy. It really does taste like broccoli, so if you are not fond of broccoli this recipe is not for you. The texture was nice and it came together easily. I found the original recipe on pinterest which was pinned from Smitten Kitchen by a lady I follow. What you need: 1/2 pound of broccoli 1/2 pound pasta (I chose spaghetti) 1 TBS unsalted butter 1 TBS olive oil 1/2 small onion, minced 2 cloves garlic, minced 1/2 teaspoon table salt 1/8 teaspoon ground black pepper 5 TBS heavy cream 1/2 cup Parmesan cheese What you do: Boil a large pot of water for your pasta. Meanwhile, chop broccoli into bite-sized pieces. Steam your broccoli for 5 to 6 minutes. You can do this over your pasta water, or use a steamer, or do so in the microwave. Whatever works. This slow cooker meal is comfort food at its best. It calls for dried herbs which you probably already have in your cupboard. Have you tried freeze-dried herbs yet? You can use those in this recipe also, they are delicious. You can use leftover ground beef in this recipe really easily as well. This lasagna slow cooker soup can be made on either low or high in your Crock Pot and both turn out great. Broccoli & Cheddar Pasta There are times when our refrigerator is bare and our cabinets are empty. These are days when we usually order Jimmy Johns sandwiches (they deliver and they are delicious)  Last week I had a day like this – I controlled the urge for jimmy johns and tried to come up with something to eat from the little that we had. I came up with this broccoli and cheddar pasta. It really is just pasta and broccoli with milk based sauce and cheese on top. Broccoli and White Cheddar Mac & Cheese I found this recipe on pinterest and it is yummy!! I can’t wait to make it again. I found the white cheddar cheese in the deli section of wal-mart it was the “Vermont” brand.  What you need:  3 cups frozen baby broccoli florets 1/2 pound elbow macaroni (or however much you are going to need) 1 1/2 tablespoons unsalted butter 2 tablespoons flour 1 1/3 cups milk 4 ounces sharp white cheddar cheese, grated 1 -2 ounces pepper jack cheese, depending on the spice you want, grated  ( I used the pre-shredded pepper jack and it was fine) salt to taste What you do:  Microwave broccoli florets in a large, microwave safe bowl according to package instructions until tender (usually 4-5 minutes). White Cheddar Chicken Pasta I found this dish on pinterest. It was a connected to a blog called “Whats for dinner?” My sauce did turn out a little “runny”. I am not sure the solution to that, but other than the sauce being runny, it was tasty! The chicken was especially delicious!  For the chicken: 2  skinless chicken breasts, trimmed and cut into 1 inch pieces 1 tsp dry mustard 1/2 tsp dried thyme 1/2 tsp salt 1/2 tsp pepper 1 T olive oil Heat olive oil in a large skillet over medium heat. Mix together mustard, thyme, salt and pepper and sprinkle over chicken pieces. When pan is hot, add chicken and brown about 3 minutes per side until cooked through. Chicken Enchilada Pasta Mmmmm….are the only words I can use to describe this pasta. It does serve about 5 or 6, but we cooked for 3 and ate it as leftovers the next day.  I found this recipe on “Six Sisters’ Stuff” Blog. I just tweaked very minor details to make it something Kyle and I would love.
