This sauce is for you if you like broccoli as much as I do! It is one of my favorite vegetables. I remember my mom telling me they are like little “trees” when I was little I made my pesto in the food processor. Unlike normal pesto this contains NO basil – the basil was replaced by the broccoli – hence the name Broccoli Pesto Sauce! What you need:  1/2 pound of broccoli 1 Tbs butter 1/2 small onion, minced 2 cloves garlic, minced or put through a garlic press 1/2 tsp salt 1/8 tsp pepper 5 Tbs heavy cream (heavy whipping cream liquid) 1/2 cup Parmesan cheese (I used pre-shredded) What you do: Chop broccoli into bite-sized pieces. These burritos were delicious! The most time consuming part was peeling and cubing the sweet potatoes, but it wasn’t too bad. I just got a mandolin thing and it may cut the time in half! I am a little scared to use it as the blades have a million “these are super sharp” warnings on them. I got this recipe form, she is awesome.  If you haven’t visited her site, you should!  I changed the recipe a little to suit our taste. Her recipes are quite family friendly. Creamy Cilantro-Lime Salad Dressing

This makes about a 3/4 cup of dressing.  We doubled the recipe and had plenty for four large salads and some leftovers. There are many of these recipes floating around out there. I really don’t like mayonnaise, wait, I hate it! so I needed a recipe that didn’t contain it. The results were a creamy, limey, cilantro goodness. A must try! This Cilantro Lime Salad Dressing will not disappoint. What you need: 1 cup of loosely packed, roughly chopped, cilantro (with stems removed) 1/2 cup plain Greek yogurt 3 Tbsp sour cream 3 Tbsp fresh lime juice (about 1 small lime) 1-2 cloves of garlic 1/4 cup of olive oil 1.5 tsp white vinegar 1/8 tsp salt What you do: Put all of the ingredients in a blender or food processor and pulse until smooth.

Lemon Poppy Seed Vinaigrette Salad Dressing

Mmmmm. Homemade salad dressings are the best. I like how this one contains ingredients that most people have in their pantry. This Lemon Poppy Seed Vinaigrette dressing doesn’t need anything more than a jar to combine the ingredients in. You don’t need to chop, dice, cook, or use a food What you need: 2 Tbsp red wine vinegar 2 Tbsp extra virgin olive oil 1 Tbsp fresh lemon juice 1 teaspoon poppy seeds 1-2 teaspoons sugar salt and pepper to taste (I just did a few turns of the grinder) What you do: Add all ingredients into a mason jar and shake to combine.

Clean Orange Hummus Salad Dressing

I love hummus and I love a good homemade salad dressing! So, when I came across this recipe in All You magazine I just had to try it. I don’t “eat clean” all of the time, but this recipe was listed as a “clean” orange hummus salad dressing. It ends up being a little brown in color because of the balsamic vinegar, but don’t let the color alarm you because the taste it divine. This dressing is sweetened with maple syrup as it is a clean dressing, but I have used honey before and it was great. What you need: 3 Tbsp plain hummus 2 Tbsp balsamic vinegar 3 Tbsp orange juice 1 tsp mustard 1 tsp maple syrup 1/2 tsp fresh ginger (grated with a micro-plane) What you do: Whisk all of the ingredients together in a bowl and you’re ready to serve over the salad of your choice!

500 Calorie Enchiladas

 I found this recipe in Cooking Light magazine. I was skeptical about how they would taste, being 500 calories (serving: 2 enchiladas) but, the ingredients seemed pretty straight forward, so I tried it. They were delicious!! My husband even liked them, and his didn’t contain and cheese. I liked this recipe because I had everything on hand in my pantry or refrigerator. What you need: 1 pound boneless, skinless, chicken breast 1 TBS chili powder 1-15oz can black beans (low sodium) rinsed and drained 1 cup frozen corn 1 cup salsa 8-8inch whole-wheat tortillas 1/2 cup shredded cheddar cheese (reduced fat) What you do: Preheat oven to 375 degrees. Cut chicken into small pieces. Place in a large pan, sprinkle with chili powder and cover with 1/2 cup of water. Bring to a boil, reduce heat to medium-low and simmer for 10 minutes.
